5 easy desserts to treat yourself with

We all crave a little sweetness sometimes, especially now that it’s near the end of the semester and the pressures of assessments have hit.

You might want a creamy trifle or just a slice of cake to satisfy your sweet tooth and escape from reality for a while.

Here’s a list of dessert recipes you can make at home for yourself, with your family, or with your flatmates: you won’t believe how easy they are to make!

Tiramisu – from Cooking Tree

  • 150g Mascarpone cheese
  • 30g plain yogurt
  • 25g sugar
  • ¼ tsp vanilla extract
  • 75g whipped cream
  • 4 ladyfinger cookies
  • 2 tsp cocoa powder
  • A cup of coffee
  1. Add Mascarpone cheese in a bowl, gently loosen and mix with plain yogurt, sugar and vanilla extract.
  2. Add whipped cream and mix well.
  3. Put some cream mixture into a smaller container and flatten it up as the base of the tiramisu, soak the ladyfinger cookies in the coffee.
  4. Place the moistened cookies on the cream and cover with the rest of the cream, place it in the refrigerator for one hour. 
  5. Take your tiramisu out and decorate with some whipped cream and cocoa powder!

Milky Cheese Cookie – from Cooking Tree

  • 70g unsalted butter
  • 110ml condensed milk
  • 200g cake flour
  • ⅛ tsp salt
  • 200g Gouda cheese
  1. Whisk the butter in a bowl, add condensed milk and mix, then add the cake flour, salt and mix them again. Fold the ingredients and they should turn into a dough.
  2. Wrap the dough, mold it into a rectangular shape, put it in the refrigerator for one hour.
  3. Place the Gouda cheese wide and flat and put it in the refrigerator to harden.
  4. Roll the dough flat, cut it into pieces with a 5.7cm cutter, bake them in a 170°C preheated oven for 13 – 15 mins.
  5. Cut the harden cheese into the same shape and sandwich between cookies.

Caramel Earl Grey Pudding – from dimcookguide

  • 35g sugar
  • 10ml water
  • 280ml milk
  • 50g sugar
  • 4 earl grey tea bags
  • 1 egg yolk
  • 2 eggs
  • 170g whipped cream
  1. Add the sugar into a pot and place over a low heat. Once it melted and turn brown, put it into a bowl and mix with water.
  2. Pour them into four pudding containers, place the containers on the baking tray and set aside. Preheat the oven to 130°C.
  3. Add milk and 10g sugar in the pot with a low heat, turn off the heat and soak the tea bags for three mins.
  4. Mix the egg yolk, eggs with 40g sugar in a bowl, add the tea mixture, whipped cream and mix. Pour them into the pudding containers.
  5. Add some water to the baking tray, cook them in the oven and wait until 40 – 50 mins. Let them cold down in room temperature, put them in the refrigerator and serve!

3-Minute Microwave Mug Cake – from dimcookguide

  • 40g self-raising flour
  • 30g sugar
  • 8g cocoa powder
  • 30g unsalted butter
  • 10ml milk
  • 1 egg
  • 15g chocolate chips
  1. Add the butter into a mug and melt it in the microwave for 10 secs.
  2. Add self-raising flour, cocoa powder, sugar, egg, milk and mix well. Place the chocolate chips on the surface.
  3. Put it in the microwave with medium heat for three 3 mins and that’s it!

Eton mess  – from Amanda Tastes

  • 3 egg white
  • 120g caster sugar
  • ½ tsp lemon juice
  • ½ tsp vanilla extract
  • 400g strawberry
  • 3 tsp strawberry jam
  • 400ml refrigerated cream
  • ½ tsp vanilla extract
  1. Preheat the oven to 90°C, add the egg white, lemon juice, vanilla extract, beat until bubbly. Add a spoon of sugar, beat for a while, finish adding all the sugar in this manner until it fine and glossy.
  2. Spread a little meringue on the baking tray to stick a piece of parchment paper on it, pipe meringue kisses with a piping tip and put it in the oven. Two hours for small meringue kisses, three hours for bigger ones.
  3. Let them cold down in room temperature and store in a jar (you could eat them as snacks).
  4. Crush some meringue kisses, dice the strawberries, keep some intact for decoration and set aside. Add vanilla extract to the refrigerated cream in a bowl, beat it to 80% stiff and mix with the crushed meringue kisses.
  5. Place one layer of cream mixture, one layer of diced strawberry, one layer of strawberry in a glass container and fill it in this order. Decorate with the strawberries and meringue kisses.

Some delicious desserts will absolutely dazzle your dinner and you can make them in advance then finish the last step to serve them in the evening.

These sweets are also perfect to share with your friends and flatmates to impress them!
